Summer berry chia pudding parfait anyone?! Impress your guests this weekend with our super easy and refreshing recipe for the perfect after dinner pud! It even has some sneaky Aloe Vera added to make it extra healthy.
Summer Berry Chia Pudding
Ingredients, Makes 3
Vegetarian & Vegan friendly
¼ cup + 2 tbsp chia seeds
¾ cup coconut milk
¾ cup coconut yoghurt
1 cup raspberries, mashed
¼ cup Simplee Aloe Organic Aloe Vera Health Supplement
2-4 tbsp sweetener, to taste
1 tsp vanilla bean paste
Dairy-free oat cream
Fresh blueberries and raspberries
Fresh mint
Instructions
- Mix the coconut milk, yoghurt, aloe supplement, raspberries and vanilla bean paste together in a jug or bowl, then stir in the chia seeds and set to one side for 5 minutes before stirring again.
- Place in the fridge overnight to thicken, then in the morning layer ¼ cup chia pudding, fresh berries and oat cream into a glass, do this with all 3 glasses and repeat until each glass is full. Enjoy!
